M's Mini-Series: Organic Sugar Cookies

Making cookies from scratch is great if you have the time. If you are like me, you take pleasure in shortcuts!
When I was at the GFAF Expo, I stumbled across a company that makes gluten-free mixes! The good folks at Sevierly Good Gluten-Free offer a wide range of organic baking mixes. I was saving their cookie mix for a rainy busy day. Thank goodness I did- or I would have been in quite the pinch! The cookie dough was super easy to work with!

As always, we added a personal touch with a mini cookie cutter from DCC Cakes.

Once cooled, I topped the cookies with a basic icing. Of course, M got to pick the food dye color.

We actually ended up sharing the mini-cookies with M's Pre-K teacher- she has Celiac Disease and has been a huge supporter of M's new diet. Mrs. Sophia loved the cookies and said she had to think twice before sharing them with the kiddos! M told me that all of the kids loved them. Kid tested and Celiac approved!

Disclaimer:
I was provided with both the cookie mix and the cookie cutter for the purpose of this demo. All opinions are my own.
