This week's recipe is brought to you by my ill-prepared dinner plan for last night. M and I came up with the brilliant plan to make gluten-free nachos! We had everything we needed- except the taco seasoning! I raided my spice rack and we made our own. I am glad we did for many reasons: time with M in the kitchen, the possibility to customize the heat level and the fact that many store bought mixes are not GF! Keep an eye out for sneaky gluten sources!
GLUTEN-FREE TACO SEASONING
(makes the equivalent of 2 seasoning packets- enough to season 2 lbs. of meat)
Directions
Add 2 tablespoons (30 ml) of seasoning mix and 1/4 cup (60 mL)) water to 1 lb. of cooked & drained meat. (We used ground turkey)
Simmer until all the water is gone.
Use your seasoned meat in tacos, enchiladas, burritos, casseroles or on nachos!
Store any remaining seasoning mix in an air tight container.
I love the deconstructed nachos. I eat like that sometimes, too!

ReplyDeleteI'm sure your taco seasoning mix is better than anything on the store shelves. I think I have most of those spices and seasonings in my pantry, I should mix up a batch for our nest Taco night.
